A classic highball is one of the simplest cocktails there is: spirit and a mixer, served tall over ice. This non-alcoholic cocktail follows that refreshing template, but with a little extra lift.

Tenneyson Black Ginger brings bold peppery heat and earthy, herbal depth; ginger beer adds spice and bubbles; and a touch of lemon juice and ginger syrup rounds the drink into a brighter, more expressive non-alcoholic highball. A few dashes of our Aromatic bitters sharpen the finish and keep the drink planted firmly in cocktail territory—not merely a sweet ginger mocktail. It’s refreshing, zesty, and easy to make, perfect for slow sipping any time of day.

This recipe was perfected using Tenneyson Black Ginger, but whiskey or rum (either non-alc or full-strength) could be substituted instead.

Add all ingredients (except ginger beer) to a Collins glass and stir.

GINGER BEER VS. CLUB SODA

Ginger beer creates a spicier profile with a sharpness that encourages slower sipping, but for a lighter (and less sweet) version that’s great for daytime drinking, try using sparkling water instead. Either way, the drink stays balanced and refreshing.
